Bizzle-were the frozen crawfish just a package of crawfish? If so, they are good for making crawfish etouffee. Yummy by itself over rice, even better on top of a ribeye! Bigheart-my best longtime male friend has a bunch of folks over for gumbo every Mardi Gras so I spent part of the day there, ate some delicious chicken and sausage gumbo and passed a good time! I really am surprised that both you and Bizzle know what boudin is! I didn't realize that people outside this area knew about it. Don't mean to make you drool talking about the great food around here!

Some boudin, beignets, bread (French)and burgers are always great too! Many people also eat gumbo today as well as delicious King Cake with a fruit and cream cheese filling for dessert! Yum! If you ever make it down this way you really should try to come for Mardi Gras. What goes on in the city-all the many parades, floats and carnivals- is different from the towns. Some of the smaller towns have a group of men in costumes that ride on horseback from house to house and entertain homeowners for ingredients for a gumbo. Usually someone will throw a live chicken from their yard and these half drunken costumed men will chase it all around trying to catch it. Others give them rice, sausage, seasoning and other things. They ride back in to town and make a huge pot of gumbo for everyone to eat and the town gets together and has a party all day.
